Amy Sedaris' Cupcakes

1 ½ sticks of unsalted butter
1 ¾ cups of sugar

Beat well, then add:

2 large eggs
2 Teaspoons of pure vanilla
½ teaspoon of salt
2 ½ teaspoons of baking powder
2 ½ cups of flour
1 ¼ cups of milk

Beat well, fill cups, and bake at 375 degrees for 18-20 minutes. You should get 24. I get 18, 'cause I'm doing something wrong.

Frosting

1 box of Domino confectionary sugar
¼ cup half-and-half
1 teaspoon of pure vanilla
(Note from webmaster: I like to add a stick of unstalted butter to the frosting. It makes a rich buttercream, which tastes exactly like the buttercream frosting on the cupcakes that I bought from Amy a couple years ago {pictured on left}. While I haven't tried it myself yet, I've heard that the recipe without butter makes a thinner, more glaze-like icing.)

Whip for a while, color if you want.
